The 2:1 proportions of garlic to nuts and cheese make it easy to adapt this recipe to the amount of garlic you have. As with all pestos, you can always mix your greens too.

Ingredients: 

  • 50g wild garlic
  • 25g parmesan or other hard salty cheese
  • 25g toasted pine nuts, walnuts, hazelnuts or any other nut you'd like
  • Olive oil
  • Salt and pepper
  • Lemon juice


Directions:

  1. Grind up the toasted nuts, garlic and cheese in a pestle and mortar (or use a blender if you're pushed for time).
  2. Gradually add oil until you have the consistency you desire, then season well and add a little lemon juice to taste.
