The humble root veg, also known as 'neeps', can be a delicious, healthy and sustainable addition to your meal-times. Did you know 100g of swede can have 41% of our daily vitamin C intake needed, is a great source of fibre and other vitamins. Here are some ways you could enjoy it...

  • Pie e.g., cheese leek and swede, chop up your swede into cubes, parboil it and then add it to a pie with any other fillings of your choice


  • Swede and carrot mash, parboil swede and carrots, the mash with plenty of salt and butter


  • Lanttulaatikko(Finnish swede casserole), a warming winter pie made with eggs and cream. Perfect for winter evenings.

 

  • Winter soup, add to a soup with beans, tinned tomatoes and plenty of other veg. make a base of celery, onions, garlic and carrots, then add in whatever other veg you like and simmer in stock

 

  • Roasted, chop into chunks then roast for 35-40 minutes, tossing regularly. Flavour with thyme, or try a chilli, honey and cumin marinade.
