Just pop the tray in the bottom of the oven whilst you are cooking something else. They need around half an hour at 180C but you can just leave them in the oven as it cools and it will add to the flavour. They are quite tangy so you don't need many to cause a flavour sensation. We add them to pasta bakes, as a layer in a lasagne, as a pizza topping etc.  

Ingredients:
    

  • Green tomatoes
  • Oil
  • Salt & black pepper
  • Garlic diced or crushed (optional)
  • Herbs of your choice (optional)


Method:

  1. Heat the oven to 180C
  2. Wash the tomatoes and chop in half then arrange them on a silicone mat or a baking tray.
  3. Add a glug of oil and your seasoning then mix with your hand to make sure each tomato is coated.
  4. Roast for around half an hour. They are good when they start to brown slightly.
  5. Leave to cool then freeze in portions ready to defrost and add to winter dishes.
