We’ve shared this recipe with you before but it’s one of our favourites, the luscious Kalamata olives and juicy oranges making it something really special. You could substitute clementines or satsumas for the orange, but you might struggle to get any zest from them.


Ingredients:

·        1 radicchio

·        2 oranges

·        200g kalamata olives

·        4 tbsp olive oil

·        2 tbsp balsamic vinegar

·        Pinch of salt


Method:

First, make the dressing by zesting both oranges and juicing one of them. Mix the juice and zest with the oil, vinegar and salt.
Tear up radicchio leaves into large pieces, then wash and spin. Remove the stones from the olives and crush each one using your thumb. Peel the remaining orange and tear into chunks. Mix the olives and orange with the dressing, then toss thoroughly with the leaves. Allow to rest for at least half an hour before serving.
