If you’ve ever eaten tomatoes in Spain, you may have come across this recipe, ‘pan con tomate’. It’s a super simple recipe, the key factor being good quality ingredients.
Ingredients:
· Fresh bread
· Extra virgin olive oil
· Fresh, ripe tomatoes (beefsteak or large tomatoes are preferable)
· Salt
· Whole garlic clove
Method:
1. Chop your tomato in half and grate it, until you are left with just the skin (which you can discard). If it is too liquid-y you can strain the tomato mixture.
2. Add salt and olive oil to your tomato mixture.
3. Toast your bread, then take a fresh garlic clove and rub the bread with it.
4. Spoon the tomato mixture onto the garlic toast, then enjoy!
