Image of New Zealand Spinach and Cheese Scones

Make delicious savory New Zealand spinach (or regular spinach) and cheese scones by rubbing 75g cold butter into 3 cups flour and 6 tsp baking powder. Stir in 1 cup grated cheese and 60g finely chopped blanched spinach, mix with 1 cup milk, cut into shapes, and bake at 220°C for 12–15 minutes.

Ingredients:

  • 350g flour
  • 6 tsp baking powder
  • ¼ tsp salt
  • 75g cold butter (cubed or grated)
  • 100g grated cheddar cheese
  • 60g spinach (blanched and squeezed dry if using wild native New Zealand spinach/Warrigal greens)
  • 225ml milk (plus a little extra if needed)

Method:

  1. Heat your oven to 220°C.
  2. Sift the flour, baking powder, and salt into a big bowl.
  3. Add the cold butter and rub it in with your fingers until the mix looks like fine crumbs.
  4. Stir in the grated cheese and finely chopped spinach.
  5. Make a hole in the middle, pour in the milk, and mix gently with a knife.
  6. Turn the dough onto a floured board, pat it flat, and cut it into squares or rounds.
  7. Bake for 12 to 15 minutes until golden brown.
