
The tanginess of the feta, sweetness of the nectarines and fresh mint are a dreamy trio in this salad. Roughly chopping and bruising the mint helps release extra flavour.
Ingredients:
· Nectarines
· ½ block of feta cheese
· 1 tbsp extra virgin olive oil
· 1 tbsp cider vinegar
· 1 tbsp honey
· ½ tsp chilli flakes
· Sprinkle of sea salt
· Roughly chopped mint
Method:
1. First, mix up the salad dressing. Add olive oil, vinegar, honey, chilli flakes and salt to a bowl. Mix well.
2. Slice nectarines into half moons and gently coat in salad dressing. It may be best to use a wooden spoon or your hands to mix them, so they are not too bruised.
3. Arrange nectarines on a serving plate in a circular pattern.
4. Crumble feta on top and sprinkle across nectarine slices. Finish will a sprinkle of mint.
