Quick and easy Egg Salad Sandwiches (x 3)
 
I find this simple meal is made unbeatable by the quality ingredients used.
 

  • Boil eggs, then mix with mayonnaise for an egg salad.
  • Peel 1 or 2 carrots, and store in a jar with vinegar for a light pickling effect. Add mustard seeds, a little sugar and salt to the jar.
  • Assemble sandwich – add egg, pickled carrot, FHF salad and spinach in each day for a quick easy lunch. You can do a quick salad dressing with freshly squeezed lemon juice + olive oil. I also recommend wholegrain mustard on the bread, but that’s personal preference! 

Tomato and Bean/Meat Stew
 
This recipe would work with lots of different veg ranges – head to the website to follow the recipes in more detail.
 

  • Fry up onions, the rest of the carrots plus any ginger and garlic you have to hand for around 10 minutes. I also like to use mustard, coriander and cumin seeds at this stage.
  • Meanwhile, roast the parsnips and turnips with a parmesan coating. You can use these recipes 'Roast Turnip with Parmesan and Thyme' or 'Delia Smith's Parmesan Baked Parsnips'. This part will take about 40 minutes.
  • If you’re using meat, this is also a good time to fry this off.
  • Next, add a tin of tomatoes to onion and carrot stew pot, plus any stock if you are using it. While this is simmering, chop your savoy cabbage up into thin strips and then add this to the pot.
  • Rinse and add a jar of your favourite beans (we like to use big beans – you can also get UK grown Hodmedod’s beans and pulses in the FHF shop).
  • Finally, add a squeeze of fresh lemon + any herbs you fancy, and toast any sourdough you’ve got left.
  • Store stew in tupperwares for reheatable lunch meals – with a side of roasted veg.
