Using up the Sicilian summer lemons – verdello – this recipe makes enough for 4 people. We found this recipe via Sicilia Agrumi.

Ingredients:
 
·      6 Sicilian green lemons;
·      The peel of half a lemon (only the green part);
·      100 g sugar;
·      Half an egg white
 

Method:

1.    Cut in half, then scoop out the insides of 4 lemons. Put the empty skins in the freezer. Meanwhile, mash the flesh of the lemons until thick, and add the juice of the remaining 2 lemons.
2.    Bring 1.5l water to a boil with the sugar and the zest of half a lemon, and boil for 2 to 3 minutes; then strain the mixture and let it cool.
3.    Distribute the sorbet into the drained and previously frozen lemons, and place them back in the freezer. Your Verdello lemon sorbet is ready to be served after meals to make the hot summer days unique!
