
If you've got a glut of fennel and cabbage, why not try this super simple fennel and cabbage salad. This recipe is from Molly, an amateur chef who works at a bakery in Bristol and enjoys cooking for friends and family.
Ingredients:
· 1 fennel bulb
· White cabbage
· Lime juice
· Coriander
· Chilli Flakes
· ¾ teaspoon of salt
Method:
1. Finely chop up cabbage and massage for 5 minutes with salt until some of the juices have come out and it is starting to soften (if you tried our sauerkraut recipe a couple of weeks ago it’s a similar process!)
2. Finely chop up your fennel bulb and mix in with the cabbage
3. Add lime juice, fresh coriander and chilli flakes and mix together!
4. Serve as a delicious salad addition.
