
This one-pot dish is a great side dish, and makes our heritage Italian onions the star of the show.

1. Heat the oil in a large skillet over medium-low heat. Add the onions and cook, stirring frequently, until soft and translucent, about 8 minutes. Do not brown.
2. Add the beans, salt, pepper and water; bring to a boil. Cover the skillet, reduce the heat to low, and cook for 8 minutes.
3. Remove the lid and increase the heat to high. Cook, stirring frequently, until the liquid is evaporated, the beans are tender, and the onions are jammy, about 6 minutes. Taste and adjust the seasoning with salt, pepper, and a pinch of sugar. Serve warm.
