
Crispy Oven Roasted Chickpeas, by Matthew
This recipe went down a treat at our volunteer lunch last Friday, so we’re sharing it here. Pair these roasted chickpeas with any veg you fancy, roasted or mixed into a salad with a light dressing.
Ingredients:
· Good quality chickpeas (we recommend Hodmedods)
· Curry powder or garam masala
· Large glug of Olive Oil
· Salt
Method:
1. Preheat oven to 200oC+. Drain and rinse chickpeas in a colander.
2. In a bowl, mix chickpeas with spices, plenty of olive oil and salt to ensure all are fully coated.
3. Spread out onto a tray, ensuring they have plenty of space (Matthew recommends using your biggest oven tray) and roast for 30 mins. Make sure to shake the chickpeas every 5 minutes to keep them moving.
4. Optional – half way through gently press a few of them with a potato masher, which will give you more fluffy surface for the oil to crisp up.
5. Take out and enjoy with your veg!
