
Ready in under 25 minutes weekday meal – Nigel Slater inspired recipe is creamy and tangy with deep flavours, nicely balanced with the hit of rocket.
Ingredients:
· 400g Rigatoni pasta
· Olive oil
· 6 Pork or veggie sausages, defrosted
· 1 cup of dry white wine
· 1/2 cup of double cream
· 50g grated parmesan
· 2 tablespoons grainy mustard
· Pinch of red pepper flakes
· 25g thinly sliced basil
· 75g roughly chopped rocket
Method:
1. First, cook pasta in boiling water.
2. Next, add olive oil to heavy based pan, then fry off and break up sausages for 5 minutes.
3. Add wine to pan, then simmer until reduced by half (around 5 minutes).
4. Then, add cream, grated parmesan, mustard and pepper. Simmer for another few minutes.
5. Remove from the heat, add the basil, rocket and pasta to frying pan. Toss together.
