Image of Courgette and Leek Soup

Simple soup, great with crusty bread.

Method:
 
·        3 Leeks
·        2 Courgettes
·        3 Celery sticks
·        1 Potato
·        850 ml Vegetable stock
·        2 tbsp Rapeseed oil
·        Pepper
 

Method:


1.   Heat the oil in a pan and sweat the vegetables under a lid for 10 – 12 minutes until tender, stirring occasionally.
2.   Add the stock and pepper and bring to the boil. Lower the heat and simmer for 15 minutes.
3.   Remove from the heat and partially liquidise with a stick blender leaving.
