
Enjoy these with salad leaves, tomato and a fresh burger bun, plus a tzatziki sauce, or any other condiments you like. I enjoy sauerkraut or pickled beetroot (pick some up from the farm shop!)
Ingredients:
· 1 large carrot, grated
· 1 large courgette, grated
· 225g halloumi, grated
· 2 spring onions, finely chopped
· 90g breadcrumbs
· 1 tbsp ground cumin
· 1 tbsp ground coriander
· ½ tsp salt
· 2 eggs
· 2 tbsp flour
Method:
1. Put the courgette in a clean tea towel and squeeze tightly to remove any liquid. Tip into a large bowl and add the carrot, halloumi, onion, breadcrumbs, cumin, coriander, salt, eggs and flour. Stir well to combine.
2. Put just over half the mixture in a food processor and pulse until the mixture starts to stick together. Return this back to the reserved mixture and mix well.
3. Divide the mixture into 4 and shape into patties. Heat a barbecue or griddle pan to a medium heat. Cook the burgers for 4-5 mins each side or until golden and cooked through.
