Broccoli, Leek and Feta Frittata
 
This can be made in around 30 mins, sliced up and stored in the fridge for a quick on-the-go lunch throughout the week. Enjoy with our salad bag plus a light vinaigrette dressing.

Ingredients:

  • Leeks
  • Purple Sprouting Broccoli
  • 1 bag of FHF mixed salad
  • Extra virgin olive oil
  • 6 eggs
  • Salt and pepper
  • Feta cheese
  • Smoked Paprika


Method:

  1. Chop up leeks and PSB. Add to a skillet of hot olive oil and fry off for a few minutes, with a pinch of sea salt.
  2. Meanwhile, whisk up 6 eggs, then add the skillet with a sprinkle of feta cheese on top. Optionally add some smoked paprika too.
  3. Place skillet in oven for 15-20 minutes to bake.
  4. Once baked, either enjoy them hot with some mixed salad, or store in the fridge for lunch.
